Di Knoll’s Quinoa Tuna Creation

I think it’s awesome that everyone is getting creative on this subject. The fact that people have not only decided to introduce Quinoa into their lives in replacement of rice is a great thing.  Quinoa provides so many more vitamins and nutrients than rice, but not only that it contains protein. It’s a great compliment to many dishes, so without further ado, here’s Di Knoll’s Quinoa Tuna Creation submission.

Quinoa Tuna Creation

0.5 Cup Organic Quinoa

2.5 Cups Water

1 teaspon your favorite spice mix (curry, thai, mexi, etc)

1 tin of Tuna or fresh Tuna

1 Ear Sweet corn

Cooking Instructions:

Bring Quinoa to a boil then simmer for 10 minutes. Leave with lid on for 5 minutes to absorb the water. Add tuna and corn. Heat through and top with a few sprigs of coriander. Season and Eat!
