Quinoa Stuffing / Dressing

So don’t stuff yourself on breaded stuffing…Try the quinoa stuffing solution for a lower glycemic index, higher nutritional value food great for diabetics and those who want to keep their weight loss goals on track during the holidays.

Ingredients

1 cup quinoa, rinsed

2 cups water

1 onion, chopped

1 pound fresh mushrooms, sliced

2 apples – peeled, cored, and chopped

1/4 cup pine nuts
